Southeastern Anatolia

Gaziantep, Şanlıurfa and Mardin: pistachios, pul biber and kebabs from the charcoal grill. This is where our cuisine has its roots.

The cuisine of the region

Where the spices are at home

Southeastern Anatolia lies between the Euphrates and the Tigris, on the old trade routes to Aleppo and Baghdad. For centuries caravans, markets and kitchens have met here – and you can still taste it today.

Gaziantep is a UNESCO City of Gastronomy, famous for pistachios, baklava and kebab. In Şanlıurfa the dark isot pepper ripens, and in Mardin people cook with cinnamon, pomegranate and apricots. Bulgur, yoghurt, aubergines and plenty of fresh herbs complete the picture.

Many dishes on our menu come from this region – from Ali Nazik on smoky aubergine cream to spicy Antep ezme.
