Black Sea

Trabzon, Rize and the green mountains: tea, corn and hazelnuts – and the hamsi, the little fish that whole songs on the coast are about.

The cuisine of the region

Green mountains, tea and hamsi

The Black Sea coast is the greenest part of Turkey. Steep mountains drop straight into the sea, it rains a lot, and tea, hazelnuts and corn grow on the slopes. Almost all Turkish tea comes from Rize.

In winter everything revolves around hamsi: small anchovies, coated in cornmeal and fried until crisp, served with lemon and onions. Alongside come corn bread, cabbage soup and dishes rich in butter and cheese from the mountain villages – like creamy muhlama.

At Ali Bey you'll find Black Sea cuisine in our hamsi tava – and, to finish, in fırın sütlaç, the oven-baked rice pudding.
