Central Anatolia

Ankara, Konya and Cappadocia: steppe, wheat and lamb – hearty shepherds' pan dishes and stews from the clay pot.

The cuisine of the region

The heart of Anatolia

Central Anatolia is a vast high plateau with hot summers and cold winters. Wheat has been grown here for thousands of years, and flocks of sheep roam the steppe – which shapes the cuisine: bread, bulgur, lamb and yoghurt.

The shepherds of Karaman fry lamb with vegetables in the pan – çoban kavurma. In Cappadocia around Nevşehir, food is braised in clay pots that cook slowly in the oven. And Konya is famous for etli ekmek and for the cuisine of the dervishes around Mevlânâ.

At Ali Bey you'll find this cuisine in our çoban kavurma and our sebzeli güveç from the clay pot.
