Aegean

İzmir, Bodrum and the coast of Muğla: olive oil, wild herbs and fresh fish from the grill – light, sunny and full of vegetables.

The cuisine of the region

Olive oil, herbs and the sea

The Aegean coast is the land of olive trees. Here people cook with olive oil instead of butter, and vegetables become dishes in their own right: "zeytinyağlı" – braised in olive oil and served cold, like okra or stuffed peppers.

İzmir's markets are full of wild herbs, artichokes and figs. On the coast near Bodrum and Marmaris, fish goes straight from the boat to the grill: sea bream, sea bass and calamari, with just lemon, salt and good oil.

At Ali Bey the Aegean tastes of meyhane köftesi, biber dolma and fish from the grill.
